Delicious Summer Recipes

These cooling, pitta-friendly favorites are light, nourishing, and lovely alongside rice and dahl. Each serves 4.

Thai Summer Rolls

Serves 4 (about 3 rolls each) · ~14 g protein per serving

Rolls: 12 rice paper wrappers · 14 oz (400 g) firm tofu, patted dry and cut in thin strips · 2 cucumbers, seeded and cut in matchsticks · 3 cups arugula · 1 cup mint leaves · ¾ cup cilantro · ¼ cup toasted sunflower seeds · 2 tbsp sesame seeds · ½ tsp salt · optional 4 oz cooked, cooled rice noodles.

Almond-lime dipping sauce: ¼ cup almond butter · 3 tbsp lime juice · 2–3 tbsp warm water · ½ tsp salt.

Lightly season the tofu; sear or leave raw for a cooler dish, then cool. Whisk the sauce until smooth and pourable. Dip a wrapper in warm water 10–15 seconds until pliable, lay flat, and layer arugula, cucumber, mint, cilantro, tofu, and a sprinkle of seeds near the bottom third (add noodles if using). Fold the bottom over, fold in the sides, and roll snugly. Serve fresh with the sauce.

Mung Bean Dosa (Savory Protein Pancakes)

Serves 4 · ~18 g protein per serving · soak beans overnight

You'll need: 1½ cups yellow split mung beans (moong dal), soaked overnight and drained · optional ¼ cup poha to thicken · ¼ cup chopped cilantro · 1 tsp lightly crushed coriander seeds · ½ tsp fennel seeds · ½ tsp cumin seeds · ½ tsp turmeric · ¾ tsp salt · ghee or olive oil for cooking · water to blend.

Blend the mung beans with a little water into a smooth, pourable batter (add poha and blend again if you want it thicker). Stir in the cilantro, coriander, fennel, cumin, turmeric, and salt. Heat a lightly oiled pan over medium, pour a ladle of batter, and spread thin. Cook 2–3 minutes until the edges lift, drizzle a little ghee, flip, and cook until golden. Serve warm with cilantro chutney.

Cilantro Chutney

Cooling & bright · perfect with the dosa

You'll need: 1½ cups fresh cilantro · ½ cup mint leaves · 2 tbsp raisins · 2 tbsp almonds · 2 tbsp lime juice · ¼ tsp salt · water to blend.

Blend everything with enough water for a smooth, spoonable dip. Taste and adjust lime and salt, and serve fresh.

You're Invited: Ayurveda Summer Cooking Class

Sunday, July 26th · 3:30–6:00 pm

Come cook, learn, and share a meal with a warm circle of fellow Ayurveda lovers. Nalini, a local Ayurveda Health Educator, will be teaching the cooking class, and I'll be talking about the six tastes and how to balance pitta in the summer. Together we'll make:

  • A nourishing dahl

  • A simple leafy greens dish

  • Sweet, wholesome laddoos

Along the way you'll pick up practical Ayurvedic cooking tips — spicing, digestion, seasonal eating — and we'll sit down to enjoy the meal we've made together. It's a joyful way to learn, meet kind people, and leave with recipes you'll use all summer.
